Meet our Executive Chef, Ryan McVeigh

Showtime Event Group’s Executive Chef, Ryan McVeigh, is at the helm of all menu creation and planning for events, catering, weddings and corporate functions. He’s also the man on the ground, in the kitchen, donned in chef whites, whipping up some of Melbourne’s best food and delicious bites. 

Ryan became a chef because he enjoys the satisfaction of creating meals that bring people together. “Food can be more than just flavours and energy,” says Ryan, “it connects people together; it brings cultures together and it can tell a story. This is why I love food and love being a chef.” 

We sat down with Chef Ryan and asked him some quickfire questions about his favourite memories (and biggest challenges) during his time at Showtime Event Group.

Describe your job in one word. 
Epic.

What’s your best memory at Showtime? 
During lockdowns, the senior staff at Showtime Event Group did a food bank style cook up for all staff, as so many of our hospitality and casuals were without work. We cooked a lot of heat and eat meals, especially for those who weren’t eligible for job keeper or government payments. It was very rewarding to do something like that, at a time when stress and anxiety were so high across the city. 

What’s the biggest challenge you’ve had to overcome during service? 
At one of our remote locations, the oven broke down an hour before the event! It took some strategic thinking to be able to not only cook the food but produce an amazing event. 

What is your most favourite dish that you’ve created?
I love the idea of bespoke themed events, so in terms of a favourite dish I would say anything that lets your creative side loose. 

Where are your favourite places to eat in and around Melbourne?
I love eating out any day of the week and trying new places. My family and I usually go out for brunch most weekends, and I appreciate a good latte. With my wife being vegan we explore Brunswick Street a fair bit and lately we have been trying different Indonesian restaurants in preparation for our next holiday abroad.

What do you like doing in your downtime?
I enjoy spending time with my daughter and wife. We usually spend time outdoors at the park or watch movies on rainy days. I enjoy trying out new cafes around town with friends and lately have the travel bug so we’re planning a holiday to Bali and doing lots of research on where to eat. 

What’s your go-to dish for a quick meal at home? 
Generally at home my go- to is to let my daughter Mia be the chef and I work for her,  so it could be anything from peanut butter cookies to pho. Mia loves being in the kitchen creating new dishes and making a mess and I love to be a part of that.

Something Blue

Never forget that something blue…

After a year of lockdowns and uncertainty, 2021 was looking up. Life was becoming back to normal. Which meant that all of our wedding couples could finally stop holding their breaths and relax. What else could go wrong was the question on everyone’s lips?

Well, we must have spoken too soon. Early into 2021, the gorgeous Ian Potter Queen’s Hall had a pipe burst and was closed for repairs.

After already postponing their love day once, Rebekah and Matthew anxiously decided to go ahead as planned but in a new space within the State Library of Victoria. After some consideration the couple decided to go with the Victoria Gallery within the Library.  

Rebekah and Matthew decided to transfer the same styling mood and theme over to the new space within the State Library with the help of the Showtime Event Group team.

The high ceilings in the gallery were a key feature for this wedding space, with the white draping that masked the walls of art. The aesthetics of the room were tied together with fresh natives, white roses and autumnal pops of colour that florist Botanics of Melbourne magically created.

We can all agree that the room was perfect! But we are yet to tell you all about the jaw dropping bride, Rebekah.

Finding the perfect dress can be a struggle. You can go into a bridal store with the intentions of trying on only one style and end up buying something completely different. Or, you can try on hundreds of dresses and not find anything that makes your heart skip a beat. Rebekah tried on quite a few dresses, and after many attempts, she decided that white was ‘not quite’ her colour.  So she decided to throw tradition out the window and stick to what colour she loves and suits her best –  blue.

Rebekah donned a custom J’Aton gown that was the perfect shade of blue for her to say “I do.” The strapless dress was covered in floral embroidery with a train that followed her effortlessly as she moved. Because Rebekah wore blue, she had her bridesmaid wear white to tie together the colour scheme.

But what is a bridal queen without her crown? For the ceremony Rebekah wore a blue crown to match her dress. J’Aton Couture outdid themselves with this dress.

Of course to fully tie together the styling, we have to mention the cake. The 3 tier was a similar blue to Rebekah’s dress, with gold detailing throughout and orchids draping down the front of it. It is clear that no detail was missed and everything just flowed so seamlessly.

Welcome to our newest venue, Aerial

It’s no secret that Showtime Event Group is growing at a rapid rate.
Coming out of a pandemic-ridden two years, the hospitality and entertainment industry has suffered a massive blow. Changes in direction for many companies has seen some succeed and some struggle.

Thankfully, our excellence within the industry has seen us more determined than ever.
The start of 2021 has seen the welcome addition to our newest venue, Aerial. Situated within Melbourne’s iconic South Wharf, Aerial ads a new element to Showtime Event Group’s portfolio which has not before been seen.

This well-established venue has been present on the promenade since 2014, and has been developed to be a premium space for those wishing to celebrate events ranging from social to corporate occasions, and most especially, weddings.
Aerial boasts memorable views of the CBD and was purpose designed by renowned female architecture firm, MEME.

This beautiful venue has a capacity for 400 seated or 600 cocktail guests. The elegant venue boasts a new, modernist aesthetic with minimal need for styling, high ceilings, impeccable architecture and romantic touch points.

Wedding Menu Tasting 2021

2020 had all of us wondering what the future would hold for the world of weddings and for the team at Showtime Event Group. It meant figuring out a way to keep our couples and their families updated, positive and focused on that light at the end of the tunnel.

After the better part of a year with no weddings due to Covid-19, the New Year rolled in and we found that light at the end of a very long tunnel; we could finally celebrate with our eagerly anticipated Menu Tasting Event. This event is the one night our wedding couples across all 4 venues come together for a taster of what to expect on their big night; from cocktails and canapes to desserts plus everything in between we hosted a night our couples would never forget.

I wish we could say the night went off without a hitch but we all know a little hiccup in the road is what we are the best at overcoming and as we say at Showtime, ‘The Show Goes ON’; 72hrs prior to opening the doors at  Showtime Event Centre, there was an ‘oh wow, oh no’ moment when the final guest number rolled in well above the Covid safe square meter restrictions. Fortunately enough we had a plan B; another location of ours with some pretty epic spaces available to us – The State Library Victoria.

On Thursday 14th January at 6:30pm we welcomed over 200 guests into ‘Latrobe Reading Room’ followed by ‘The Ian Potter Queens Hall’. This night marked the roll out of our brand new Menu curated by our Executive chef Ryan McVeigh – and can we say – the food did not disappoint! Couples were also able to trial our new cocktails including Salted Caramel Espresso Martinis and Lychee Sours.

All of this would not have been possible without the incredible suppliers we stand by and work with week in, week out.

On arrival our couples were welcomed by the incredibly skilled Dario Zhang’s Violin performance as he filled the room with music, passion and ambience.

The smell of fresh flowers filled the venue thanks to Bouquet Melbourne and Botanics of Melbourne. The beautiful centrepieces became a keepsake for each couple to take at the end of the night.

Styling elements were kindly supplied by AMICA including a show stopping welcome arbour that doubled as the perfect photo booth!

Brides couldn’t help but gravitate towards the glamourous Raffaele Cuica Bridal gowns while the succulent cake samples from Nikos Cakes were a big hit for all.

Completing the perfect setting was the sweet sound of our Mrs Dee getting the party started with her incredible acoustic performance.

Last but certainly not least Andrew Avi photography captured all of the candid moments throughout the evening, thank you for always being there and snapping away to capture the memories.

2021 started with a bang and we aren’t looking back. Our Menu Tasting marks a new year! So congratulations to all of our couples, we can’t wait for your big day!

Our First Event Back

We chat to Ruby; our State Library Victoria Corporate Event Producer, about her first event back.

How did it go?
Reconnecting, celebrating and finally getting to see your close colleagues and friends after the year that was 2020 – for many people an end of year event is what everyone needed. Our first event back was in The fantastic Ian Potter Queens Hall for 150 guests. Although end of year functions looked a somewhat different, it still held its purpose of bringing everyone together to enjoy face to face socialising and celebration, which was more important than ever. There was such an overwhelming sense of happiness and I could definitely feel the energy in the room of people seeing each other in an event setting again. The team even felt the buzz after it was all over, a feeling you just don’t get from being sat behind a camera on zoom.

What did it look like with COVID rules? How did it feel?
Lots of sanitiser bottle everywhere! All guests were required to sign in on arrival via QR codes for contact tracing, not just your ordinary registration table. Guests were sat a little further away from each other and greetings were slightly different, but it was so good to see people reunite and have a good time.

There was such an overwhelming sense of happiness and I could definitely feel the energy in the room of people seeing each other in an event setting again.

What was different?
While there were restrictions we were not used to and masks have never been a requirement for events we have held/been too, It still looked like an event, sounded like an event and felt like an event. All the best bits were still there, just in a slightly more spacious and restricted setting.

Was your client nervous prior, did our postponement policy help they client in the lead up?
The client absolutely felt uneasy putting together the event, however sending through our Covid Safe plans, explaining how everything will work on the night and event information documents for attending guests on what to expect, eased the anxiety from both clients and attendees. Open communication from the word go and the client being able to call us at any point without hesitation for updates and questions on how the evening would flow, also helped a lot.

Constant changes to restrictions were also a pressure point of anxiety to our clients, as we all know guidelines and restrictions can change so quickly but any time any announcements were made we were sure to communicate what this would mean for the upcoming event. We always had plans in place and our postponement policy in place for any restrictions that may arrive without warning.

I’ve spent the past 5 months touching base with over 20 couples that have already booked their wedding, and there are so many amazing weddings in the works. One of my favourites at the moment is a concept I would love to have if I was planning my wedding today. A couple is having a late afternoon ceremony followed by margaritas, Mexican food and games on the lawn. Once the sun sets they are moving to the pool deck which will be filled with fairy lights for an epic dessert bar and dancing to see out the night.

Throughout the night there was abundance of laughter and chatter. Everyone was hugely grateful for our team walking round with sanitisers in between courses and throughout the night.

Did your guests feel safe?

Having a covidsafe marshal available at any time and visible to guests and staff was a great way to have people feel at ease.

What was the feedback form the event?
It was better than they could ever envision, they felt safe and everything ran seamlessly.

Tell us about your proposal?
I remember the day like it was yesterday. Angelo had told me he had been invited to a dinner at the Langham with the senior delegates of his company. I had no idea I was being proposed to that night BUT I was just as nervous that whole day thinking about meeting his boss for the first time. Angelo picked me up and said given we are early, he had a surprise for me given it was our anniversary the week before. He drove us to the Fitzroy garden conservatory house which is where we have always wanted to visit and as I walked in locked doors, a private photographer greeted me informing that Angelo had organized a surprise photoshoot.

I remember feeling so overwhelmed and thought to myself this guy is crazy as usual going over the top with romantic gestures! We walked around the conservatory and took photos with our favourite music playing in the background with the playlist he had made. I remember being both excited and nervous! The moment he looked deep in my eyes and started expressing our love with tears in his eyes, I knew it was the moment I had been waiting for.

Tell us about your gown (style, how you found it, what you love)
I always thought I would wear a mermaid gown but after trying on this Demetrios ball gown, I knew it was the one as I felt so special in it. I fell in love with all the details of the dress including the silhouette beading, the lace beaded back and the long train!

What were the highlights of your day?
So many highlights! The morning was beautiful as the bridal party got ready on separate sides of the house.

The reveal was very emotional and heartwarming as I walked down a long driveway to Angelo, who had his back to me. The moment we saw each other, we both burst into tears as we have waited for this moment for such a long time.

The limousine ride with the bridal party and the photo shoots with T-One were also a lot of fun as the T-one team made us laugh so much!

Our absolute favorite part was the reception, where we danced our hearts out with our beautiful family and friends! We could not have asked for a better night filled with so much love, energy, delicious meals and an amazing ambiance.

Zaffet Royal was absolutely phenomenal and lit the entrance up!

The surprise groomsmen dance was the absolute best and filled my heart with so much love and gratitude for all the hard work Angelo, Jason and Kolja had put in! Best wedding gift ever!

What style / styling did you choose for your wedding? (Colour scheme, flowers, stationary, cake, transport
We really wanted our wedding to be elegant with “romantic dreamy” vibes so we had the room filled with fairy lights, crystal candelabras, white waterfall floral bridal table runner and lots of pillar candles around the bridal table.

After speaking to Julia, we chose Bouquet Melbourne for our centrepieces as she was so creative, professional and easy going! We chose a blush/pale pink and white palette for our floral centerpieces.

We were very blessed to be gifted our incredible 6 tier wedding cake by my beautiful aunt Mairam @ cakesbymariam.

Tell us about any challenging or emotional moments from your big day?
Having lost our fathers in the same year, the most emotional part of our big day was lighting a candle together for our beautiful fathers in heaven.

The most challenging part was every bride’s worst nightmare, when I had fractured my wrist and needed an operation to place a plate and seven pins four weeks before the wedding ( Don’t do box jumps before your wedding!). Whilst this was incredibly challenging, I felt incredibly blessed to have Angelo take over the remaining wedding plans and go out of his way to support me physically and emotionally.

What’s one piece of advice you’d give to other couples?
Turn planning days into cafe dates, makes the process so much for fun!

We, at Showtime Event Group are now focusing on ‘We’re back and Reconnecting with Confidence’

We speak to Andrea, our Client Relationship Manager about the challenges we have faced over the past year and how we have overcome them to assist our clients when booking corporate events again.

What are your clients biggest hurdles when booking new events?
COVID-19 has definitely had a significant impact on the event industry and the way that our clients are booking and planning for events.

In particular, it is the uncertainties around what restrictions might be in place, being able to host the event in a COVID-safe way and having flexible postponement conditions available, that are their biggest concerns. The reduced capacities on our venues has also been challenging as we adjust to new density restrictions.

What are you doing to overcome these hurdles?
While the reduced capacities of our venues has been challenging, Showtime Event Group are fortunate to have numerous venues around Melbourne in our portfolio.  So if the venue a client has enquired for is too small, chances are we will be able to offer an alternate venue as a solution. We are also able to work with our clients to host hybrid events, across our many multiple sites, to meet any required capacity.

While it is impossible to predict what restrictions may be in place at any given time, we have introduced more flexibility into our booking terms and conditions to give our clients peace of mind regarding postponements, cancellations and minimum spends.

How have you adapted during these times?
The pandemic provided Showtime Event Group the opportunity to really re-think the way we deliver events and, during lock-down, we created some really amazing online experiences for our clients, when we were unable to meet face-to-face.

We have always prided ourselves on our tailored approach to every event and offering flexible event solutions for our clients.   This flexible approach is even more important now, as we navigate the changing event environment we are currently operating in.

In addition to being flexible and creative, we have also had to learn how to be COVID-safe. Our venues are implementing new hygiene measures and making changes around the delivery and service of food and beverage, to ensure physical distancing and the safety and wellbeing of our clients.

How are events different now?
The booking pattern and cycle for events has definitely shifted.  Gone are the days of having a 6 month lead time from point of enquiry to event – we are now seeing many more short-lead enquiries come through.

I think this is simply due to the uncertainty around what restrictions might be in place, and people holding off until the last minute to make decisions around proceeding.

And for those events that are trying to plan in advance, there are so many ‘What if…’ questions being asked with multiple scenarios being quoted for all possible options.

A combination of people working from home and travelling less has also seen a huge shift towards hybrid meetings, with many clients opting to host their event with both in-person and virtual attendance available.  This is one change that is probably here to stay.

What exciting events do you have coming up?
We are lucky to be the exclusive catering partner at State Library Victoria. At the end of 2019 State Library completed an amazing $88.1 million redevelopment of its event and public spaces, but we were only able to work in these spaces for a few months before the world of events shut down. I am excited to get back into the Library and for our clients to finally have the opportunity to experience these amazing venues

What are you looking forward to?
After a year of people not being able to meet in person, I am ready to help our clients reconnect with their customers and staff and celebrate in person. I am excited seeing the confidence around holding events continue to grow, and am looking forward to seeing our venues full again with people celebrating and socialising.

It’s all in the detail….

Organising your wedding can be difficult at the best of times. For many, the hardest part isn’t the decision making, it’s knowing where to start! While it’s easy to get stuck on every detail, sometimes simple and easy to organise additions make the biggest difference to your day.

So for now, let’s close that google tab “how many is too many flowers?” as we at Showtime Event Group walk you through our top picks of underrated wedding inclusions.

Standard bar service is classic and you can never go wrong. With that being said, sometimes one extra flourish to your drinks service will make all the difference. For those who are looking for that final touch, consider a pop up spirits bar. This pop up bar can be set anywhere in the venue and can be styled to be a gorgeous whisky bar, gin bar or whatever takes your fancy. Make it your own and we’ll make the drinks!

Many venues have lighting included in your package to create atmosphere and style for your wedding. While the included lighting will be great for your guest’s entrance and help to start off the dancefloor, nothing is quite as romantic as a canopy of fairy lights warmly lighting your venue. Each venue can offer its own unique set up from a full room of fairy lights to fairy lights draping the entrance or behind the bridal table. When it comes to finding that final piece of styling to set the mood, look no further.

When it comes to the most important thing on the night, it’s easy to get caught between finding the right centerpieces and fitting in one last rehearsal for your choreographed first dance. Don’t forget the one thing that is truly make or break on the night… the food!! While all packages include plenty of incredible food for your guests, there’s always one addition that we’re sure your guests will thank you for. After dessert, your guests will spend their time between the bar and the dancefloor and will be working up quite the appetite. This is where our famous ‘late night snacks’ come to the rescue. Late night snacks offer a surprise round of food service for your guests with one of our delicious hand held items such as a katsu chicken burger, Texan style pulled pork sliders or crumbed whiting tacos.

Your table setting and styling is a great way to add your own personal style, as it’s something your guests will be bound to notice and appreciate. Whilst a complete table setting and often centrepieces are included in our packages, consider our coloured napkin range. Napkins are a great way to tie the theming of the room together with the table setting. Our napkin range offer different textures and colours that can suit all themes from rustic and earthy to elegant. It’s all in the detail!

Guest entertainment can be one of the toughest decisions during the planning process. While most people think about what DJ or band to choose, sometimes other entertainment additions can be great fun and worth considering too. Photo booths are always a classic option as they’re not only enjoyed by your guests, after your wedding you can have photos of your guests to remember the day. For venues with a bit of outdoor space, simple games such as giant jenga or bag toss can provide that extra touch of fun that will keep your guests entertained and create a memorable night.

While wedding planning can feel overwhelming at times, it’s good to keep these inclusions in mind to know you don’t have to spend an arm and a leg to have a dream night. These simple and easy to organise additions can create all the difference on your night and just might be the final touch you were looking for. A Helping Hand

After the last 18 months of living in a world tampered by Covid, Melbournians thought we had finally reached the end of lockdowns. Events and hospitality slowly began to re-open, along with a sense of normality. Suddenly, the news announced a new positive case, and before long we were back to talks of Lockdowns. The dreaded announcement of a short circuit-breaker lockdown hit hard.

What did another lockdown do to our already post-Covid struggling industry?

The full-time staff that could work from home doing admin and managing postponements got back to doing just that – we have seen it before! Most of at-home work consisted of staff staying in pyjamas all day and conducting zoom calls from the couch. However, the nature of our work being dependent upon in-venue events and activities means that a substantial part of our team couldn’t work from home. Sadly, the pressures of a sudden steep decline in income for the business and no active events resulted in a stand-down for casuals. For Showtime Event Group, the business’ lack of income was not as important as the distressing position our casuals suddenly found themselves in.

It broke our hearts to know that some casuals were unsure of where their next meal was coming from as a result of a sudden loss of income. So, the full-time team banded together to make sure that our family of casuals knew that we are always here for support. Our response to fears of lack of finances to purchase food was for some staff to volunteer their time to work on preparing meals from Showtime Event Centre’s main kitchen. Massive Covid-safe cook-ups took place twice a week, where staff would prepare food packs, filled with meals ranging from pasta’s to paella’s, fruit, bread and of course some cheeky bottles of wine (we are entertainers, after all).

Through collaborations with our loyal and generous suppliers, our Head Chef, Ryan McVeigh, and a team of dedicated staff offering their time, prepared over 80 meals each day from a mixture of ingredients either donated or previously ordered for our abruptly cancelled events.

We’re so proud to have a great group of staff – both casual and full timers alike. Our family-like culture is testament to the hard work we do every day to ensure our events are always conducted to the best standards. As with all families, when things get tough, we stick together.

National Award Winner – State Library Victoria

The National Meetings & Events Australia Awards took place on  the evening of Monday the 2nd April at the Brisbane Convention and Exhibition Centre, as a part of the 2019 Evolve Conference, arguably the biggest awards evening for the business and events industry. Bringing together the biggest and the best suppliers, caterers, venues and organizers from the growing Australian market.

The awards themselves are undertaken by MEA as a non-profit body aiming to provide education and professionalism within the industry. Finalists are assessed by two judges, independent from one another, for four to six hours, in order to form a careful and concise decision as to who will receive one of the respected MEA National Awards for 2019.

The State Library Victoria made it into the finalist category for Unique Event Venue – without accommodation by proudly taking out the MEA Victorian Awards on the 6th March.

As the Library’s Exclusive Events Partner, Showtime Event Group was proud to say that the State Library indeed won the National Award for Unique Event Venue – without accommodation. Unable to attend the evening in Brisbane, friend and industry professional Michael Firman from Harry The Hirer gladly accepted the award on behalf of the Library and Showtime Event Group teams, sharing;

A national award win has meant a lot for the team at Showtime Event Group and the relationship with the State Library, looking to continue to push forward with new and exciting opportunities coming later this year when the Vision 2020 redevelopment works come to completion and the State Library Victoria can share some of its new and improved exciting event spaces.
